the most widely used of any genus of fungi is Penicillium.
We're all familiar with at least one of the
uses. But some may surprise you:
bilaiae - A soil fungus used as a plant
growth promoting microorganism.
camemberti - Used in the production of
Camembert and Brie cheeses.
candida - Also used in the production
of Brie and Camembert cheeses. Not
to be confused with Candida albicans,
which causes candidiasis in humans.
chrysogenum (syn. P. notatum)
- Used to produce the antibiotic penicillin.
glaucum - Used to make Gorgonzola
roqueforti - Used to make Roquefort and
Danish Blue cheese.
